Orange peel is added to beers for flavour and its aromatic qualities, generally in the last few minutes of wort boiling and should be strained out before bottling. Some brewers add coriander and some other flavouring to the primary fermentation vessel to get a stronger flavour. When brewing with malt extracts the orange peel and other spices can be added to a muslin bag for easily removal before a wort is put into the primary fermenter, also called a strainer bag.

Orange peel often used in combination with coriander in Belgian Witbiers. Sweet orange peel has a brighter orange colour and has a relatively thin peel compared to bitter orange and when added in similar quantities to bitter orange peel, it gives a beers a strong orange flavour.

USAGE
Sweet orange is generally added to boiling wort during the last 20 minutes. The amount varies by the style of beer being brewed from about 2 grams per 5 litres to 6 grams per 5 litres of dried bitter orange peel.
